Good Eats Wednesday: DO NOT FEAR!

I love tofu. It's cheap and nutritious, and --when cooked properly-- is delicious.

Here's one way that I make tofu.

Ingredients:
1 package of firm or extra firm tofu
1/2 cup jam--I used the strawberry jalapeno. I really want to use mango chutney for this recipe. Use what you have.
1 tbsp sesame seed oil
1 tsp soy sauce
1 tsp garlic chili sauce or siracha
1 tsp fish sauce

Preheat oven to 400 degrees.
Unwrap your tofu and put it on a plate on top of some paper towels. Put some more paper towels on top and place another plate on top. Let it sit for about 10 minutes to get excess water out.

Then slice thinly.

Mix all other ingredients together and then put the tofu in.

GENTLY mix the tofu in the marinade with your hand. Let sit for 30 minutes.

Then take the tofu and lay out on a lightly oiled baking sheet.

Bake ten minutes, then flip gently. Bake for 5-10 minutes more. Watch this second side closely. You want it to be brown and delicious, not black and smoking.

While tofu is cooking, put the remaining marinade in a skillet and reduce it gently until thickened.

Serve over cilantro lime rice, top with the reduced sauce and some sesame seeds if you be feeling fancy!
